Cheesy Chicken Rotini With a Twist!


M has been a little stuffy lately (because of the weather), so I decided to spice up our dinner; maybe get her nose running a bit.  This recipe was a bit more spicy than anticipated, but it was super yummy.  I don't usually eat spicy foods so maybe I am just a big baby, lol.  Here's how I did it...


Ingredients:

1 & 1/2 lb. boneless skinless chicken breasts, cut into small/med pieces 

2 C water

3 C Rotini Pasta, uncooked

1 pkg frozen broccoli (or mixed veggies whatever you prefer)

1 10oz can of RO*TEL  (or diced tomatoes & green chilies

1/2 lbs Velveeta, cut into 1/2" cubes


Directions:
In a fry pan, cook the chicken for about 5 min, or until it is no longer pink.

Add the 2 cups of water and bring to a boil. Then add the pasta.

Cover and simmer on medium-low heat for 10 min or until the Pasta is tender. 

Then stir in the Rotel, Velveeta, & your choice of veggies.

Cook covered until Velveeta is completely melted (about 5 to 7 min). STIR FREQUENTLY it will burn!


Warning: This recipes is totally spicy, so if you do not like spice this is not the recipe for you.
